Chocolate sunflower truffles recipe

Ingredients

  • 6 ounces (170 g) Enjoy Life semisweet chocolate chips
  • 3 tablespoons (37.5 g) Spectrum Organic Shortening
  • 2 tablespoons (30 ml) rice milk or safe milk alternative
  • 3½ tablespoons (28 g) powdered sugar
  • ½ cup (112 g) sunflower seed kernels, ground into a meal
  • 1 (1.4-ounce, 40-g) Enjoy Life boom CHOCO boom dark chocolate or dairy-free rice milk bar, grated
How to Make It
  1. Place chocolate chips in a microwave-safe bowl and heat in 30-second intervals, stirring at each interval until smooth. Stir in the shortening, milk, powdered sugar, and ground sunflower seeds. Let sit to cool until firm enough to roll into balls.
  2. Place the grated chocolate on a rimmed plate and roll the truffles in the grated chocolate to coat them. Place the truffles in mini cupcake liners and chill in the refrigerator.
