Apple slivers with almond cream recipe

This is a lovely, uncomplicated dessert, and so simple to make. The apple slivers make a quick breakfast if you don’t feel like a smoothie one morning.

Ingredients

For the Almond Cream
  • 2⁄3 cup almonds
  • 1 date (medjool are best)
  • Drop of vanilla extract
For the Apple
  • 1–2 apples (such as Braeburn)
  • 1 tsp sesame seeds
  • 1–2 tbsp white or black chia seeds
  • Squeeze of lemon juice
  • 1 tsp maple syrup, plus a bit extra, to serve
  • ½ tsp ground cinnamon
  • Drop of vanilla extract
  • Pinch of salt
How to Make It
  1. To make the almond cream, soak the almonds overnight in cold water. Drain them before using.
  2. To make the apple salad, cut the apples into quarters, core them, and grate them coarsely with the peel still on. To add flavor, roast the sesame seeds in a frying pan without using any oil (but then the recipe is no longer completely raw). Add the sesame seeds, chia seeds, lemon juice, maple syrup, cinnamon, vanilla extract, and salt to the grated apple, and toss. Leave the apples to marinate for a few minutes.
  3. In the meantime, for the cream, put the almonds, 1 cup water, the pitted date, and the vanilla extract into a blender. Blend on the highest setting for 2–3 minutes. Strain the liquid through a nut milk bag.
  4. Place the apple sliver mixture on the plate. Serve the almond cream and a bit of maple syrup in separate little bowls on the side.
