  • Minced garlic
  • Diced onions
  • ½ cup oil
  • ½ cup flour
  • 1 cup sliced green apples
  • 2 cups chicken broth
  • Kosher salt
  • Black pepper
  • 2 tablespoons butter
  • 1 smoked turkey neck
  • Cinnamon (optional)
  • Allspice (optional)
How to Make It
  1. Dice up the onions, garlic, apples, turkey neck. Sauté them up in a pan with oil and butter, and add your flour as you’re doing so.
  2. Keep stirring until it makes a roux and gets thick. Don’t let the flour burn! You want it to be blonde-colored.
  3. When the onions and the apples start to caramelize, then you add your chicken broth. Bring it to a boil, and keep stirring until it gets thick.
  4. Then let it simmer for about 35 minutes. You can add cinnamon and/or a little bit of allspice if you want, but it’s optional.
