Ingredients

  • 1½ cups (192 grams) Basic Flour Blend
  • ½ teaspoon xanthan gum
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup (108 g) organic light brown sugar
  • 8 tablespoons shortening, melted
  • ¼ cup plus 2 tablespoons (90 g) Applesauce
  • 1½ teaspoons Vanilla Extract
  • ⅓ cup (80 g) chocolate chunks or dark chocolate chips
How to Make It
  1. Preheat the oven to 350°F (180°C). Grease a 9-inch (23 cm) square baking dish.
  2. Combine the flour, xanthan gum, baking powder, and salt in a medium bowl.
  3. Combine the sugar and melted shortening (while still warm) in a separate mixing bowl. Stir until the sugar is melted.
  4. Add the applesauce and vanilla to the wet ingredients and stir for 20 seconds to combine.
  5. Add the dry ingredients and stir by hand until the ingredients are fully blended and the batter is thick and slightly glossy.
  6. Stir in the chocolate chunks, by hand.
  7. Scoop the batter into the prepared baking dish and use the back of a spoon to pat it to the edges of the baking dish. Redistribute the chocolate chunks, if needed, so they aren’t clumped together.
  8. Bake for 22 to 24 minutes, until the top is lightly browned.
  9. Cool the blondies completely before cutting them into squares. Store them in an airtight container at room temperature for 3 to 4 days.
