Cambodian wild rice salad recipe

Ingredients

  • 2 cups cooked wild rice
  • ½ cup carrots, sliced
  • ½ cup broccoli florets, steamed 5–6 minutes
  • ½ teaspoon salt
  • ½ cup fresh parsley, chopped
  • ½ cup zucchini, diced
  • 3 tablespoons Coconut oil
  • 1 teaspoon fresh dill, chopped
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon freshly ground black pepper
  • Dash of cardamom powder
How to Make It
  1. Combine all the ingredients in a medium bowl, mix well, toss, and serve at room temperature.
