Ingredients

  • 2 tbsp olive oil
  • ½ medium yellow onion, diced
  • 4 garlic cloves, minced
  • 14.5 oz (411 g) cans diced tomatoes, drained
  • 4 medium pitted dates, sliced, about 1 oz (25 g) in total
  • 1 tsp salt
  • ½ tsp freshly ground black pepper
How to Make It
  1. In a medium saucepan, heat olive oil over medium-high heat. Add onion and garlic and sauté for 2 to 3 minutes.
  2. Add tomatoes, dates, salt, and pepper. Increase heat to bring to a boil. Once bubbling, remove from heat.
  3. Transfer the mixture to a blender or food processor and blend for 1 minute, or until mixture is smooth.
  4. Transfer to an airtight container and refrigerate for up to 2 weeks.
