Old country potato soup recipe

Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups of water
  • 4 medium potatoes, cubed
  • 1 tomato, chopped
  • 1 yellow or red bell pepper, diced
  • 1 small head broccoli, cut into florets
  • 2 carrots, sliced
  • ½ teaspoon cumin
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon chia seeds
  • Sea salt to taste
  • ½ teaspoon freshly ground black pepper
  • 2 scallions, chopped, for garnish
How to Make It
  1. Heat the oil in a large saucepan over medium heat and sauté the onion and garlic until the onion is translucent.
  2. Add water and potatoes and boil for approximately 15 minutes, or until potatoes are tender.
  3. Transfer potatoes, onions, and garlic to a blender or food processor with ½ cup of the cooking water and purée until smooth.
  4. Return mixture to saucepan; add the remaining ingredients and simmer for an additional 10 minutes until the broccoli is done. Garnish with scallions.
