Ingredients

For crust
  • ½ cup (115 g) packed brown sugar
  • ½ cup (60 g) Bob’s Red Mill tapioca flour
  • 1 cup (125 g) Bob’s Red Mill brown rice or sorghum flour
  • ½ teaspoon (1.2 g) ground cinnamon
  • ½ teaspoon (2.3 g) baking powder
  • Dash of salt
  • ¼ cup (60 ml) vegetable oil
  • ¼ cup (60 ml) water
For filling
  • 6 firm pears, red or green
  • ½ cup (125 g) unsweetened applesauce
  • ¼ cup (60 g) packed brown sugar
  • 1 teaspoon (2.3 g) ground cinnamon
  • 1 tablespoon (8 g) cornstarch
For topping
  • ¾ cup (60 g) certified gluten free oats
  • 3 tablespoons (21 g) fl ax meal
  • 3 tablespoons (45 g) packed brown sugar
  • 1 teaspoon (2.3 g) ground cinnamon
  • 2 tablespoons (30 ml) vegetable oil
  • 1 tablespoon (15 ml) water
How to Make It
  1. Preheat oven to 350°F (180°C, or gas mark 4).
  2. To make the crust
  3. Combine all crust ingredients in a food processor and pulse until dough forms into a ball. Press dough into a greased 9 x 13-inch (23 x 33-cm) baking pan.
  4. To make the filling
  5. Chop the pears into small pieces and stir in remaining filling ingredients. Pour over crust.
  6. To make the topping
  7. Place all topping ingredients in a food processor and pulse a few times until mixture resembles crumbs. Sprinkle over filling.
  8. Bake for about 40 minutes. Cool completely and cut into bars.
