Quinoa and asian pear salad recipe

Ingredients

  • 1 cup quinoa (rinsed, drained)
  • 2⅓ cups water
  • 2 Asian pears, cored, cut into ½-inch pieces
  • 1 cup snow peas, chopped
  • 1 red bell pepper, diced
  • ¼ cup chopped pecans or walnuts, optional
  • 4 green onions, chopped
  • ¼ cup toasted sesame seeds
  • ¼ cup fresh lemon juice
  • 2 tbsp olive oil
  • 1 tsp toasted sesame seed oil
  • Salt and pepper to taste
How to Make It
  1. Rinse quinoa and place in the Instant Pot. Add 2⅓ cups water and secure lid.
  2. Pressure cook on high for 10 minutes. Let pressure release naturally.
  3. Meanwhile, using a large bowl, combine Asian pears, snow peas, bell pepper, pecans or walnuts (if using), green onions, sesame seeds, lemon juice, olive oil, and toasted sesame seed oil. Gently combine everything together and set aside.
  4. When pressure has released, transfer quinoa to bowl containing other ingredients. Gently fold everything together and adjust salt and pepper as needed.
  5. Chill salad for at least an hour before serving.
