- 100 g (3½ oz) frozen cubed butter
- 250 g (9 oz/2 cups) plain (all-purpose) flour
- 1 teaspoon mustard powder
- 1½ teaspoons salt
- 1 egg, beaten
- 3 teaspoons cold water
How to Make It
- Place the butter, flour, mustard powder and salt in the cup of your blender, making sure you put the butter in first. Shake, then blitz for a few short bursts until the mixture resembles breadcrumbs. Tip the crumby mixture onto a clean work surface and make a well in the centre. Add the egg and water, then bring the ingredients together with your hands to make smooth pastry, wrap well in cling film (plastic wrap) and rest in the fridge for at least 30 minutes.
