Smoky BBQ chicken salad recipe

Ingredients

  • 1 box Betty Crocker Suddenly Pasta Salad ranch & bacon pasta salad mix
  • ½ cup frozen whole kernel corn
  • ½ cup mayonnaise
  • ¼ cup barbecue sauce
  • 2 cups shredded deli rotisserie chicken (from 2-lb chicken)
  • 1 cup cherry or grape tomatoes, halved
  • 12 leaves butter lettuce
  • 4 medium green onions, chopped (¼ cup)
How to Make It
  1. Fill 3-quart saucepan 2⁄3 full of water; heat to boiling. Empty pasta mix (from salad mix) into boiling water. Gently boil uncovered 12 minutes, stirring occasionally and adding corn during last 2 minutes of cook time.
  2. Meanwhile, in large bowl, stir together seasoning mix (from salad mix), mayonnaise and barbecue sauce.
  3. Drain pasta; rinse with cold water. Shake to drain well. Stir cooked pasta, corn, chicken and tomatoes into mayonnaise mixture.
  4. Line 6 serving plates with lettuce leaves. Top each with salad mixture; sprinkle with onions.
