Sweet n sour turkey meatballs recipe

Turkey provides a lighter option to this family favorite. No need for take- out when you create this sweet and sour dish in just 45 minutes.

Ingredients

  • 2 pounds ground turkey
  • ⅔ cup panko breadcrumbs
  • 2 tablespoons dried minced onion
  • ¼ cup full-fat coconut milk
  • 1 large organic egg
  • 1½ teaspoons ground ginger
  • 2 teaspoons sea salt
  • ¼ teaspoons black pepper
  • 1 tablespoon canola oil
  • ⅓ cup green bell peppers (chopped)
  • ⅓ cup yellow bell peppers (chopped)
  • ⅓ cup red bell peppers (chopped)
  • ⅓ cup orange bell peppers (chopped)
  • 1 clove garlic (minced)
  • 1½ teaspoons onion powder
  • ½ cup rice vinegar
  • ¼ cup low salt soy sauce
  • ½ cup tomato ketchup
  • 2 cups sugar
  • ⅛ teaspoons sesame oil
  • ½ can mandarin oranges (mashed with juice)
  • 2 -3 tablespoons cornstarch
  • ¼ cup cold water
  • Sesame seeds (for garnish)
  • Green onions (chopped, for garnish)
  • Steamed rice (for serving)
How to Make It
  1. Preheat the main oven to 400 degrees F. Line a rimmed baking sheet with aluminum baking foil.
  2. In a mixing bowl add the ground turkey along with the breadcrumbs, minced onion, coconut milk, egg, ginger, sea salt and black pepper. Mix using clean hands until combined.
  3. Rub a dab of oil between your palms and roll the meatball mixture into 1” evenly sized balls.
  4. Place the meatballs on the lined baking sheet.
  5. Bake in the preheated oven for 18- 20 minutes.
  6. To make the Sweet and Sour Sauce
  7. In a large wide pan over medium heat add the canola oil, chopped green, yellow, red and orange peppers and garlic. Fry until just tender, this will take about 3-4 minutes. Add the onion powder, along with the rice vinegar, soy sauce, tomato ketchup, sugar and sesame oil. Stir to incorporate and add the mandarins together with their juice. Bring to boil.
  8. In the meantime, combine the cornstarch with the cold water and whisk into the sauce. Bring to boil, before reducing the heat. Simmer for 8-10 minutes.
  9. Toss the turkey meatballs in the sweet and sour sauce. Scatter with sesame seeds and garnish with chopped green onions.
  10. Serve with steamed rice.
