Cucumber mint soup recipe

  • 2 cucumbers, peeled and chopped
  • 4 stalks celery
  • 1 cup plain soy yogurt
  • 2 teaspoons fresh mint, chopped
  • 2-3 cups water to desired consistency
  • ¼ cup diced red bell pepper, for garnish
  • ½ cup cucumber zest, for garnish
How to Make It
  1. In a food processor, purée the cucumbers, celery, yogurt, and mint.
  2. Place the purée and water in a medium bowl and blend well.
  3. Garnish with the diced red pepper and cucumber zest.
