French toast with earl grey syrup recipe

Ingredients

Earl Grey Syrup
  • 1 cup sugar
  • 4 Earl Grey tea bags
French Toast
  • 4 large eggs
  • ¾ cup whole milk
  • ¾ cup heavy cream
  • 2 tablespoons sugar
  • 1 teaspoon pure vanilla extract
  • Pinch of kosher salt
  • 2 tablespoons (¼ stick) unsalted butter, plus more for serving
  • 8 1-inch-thick slices challah bread or good-quality white bread
How to Make It
    To make the Syrup
  1. In a small saucepan, bring 1 cup water to a boil. Add the sugar and simmer until the sugar is dissolved. Remove from the heat, add the tea bags, and let steep 5 minutes. Discard the teas bags. Bring the sweetened tea to a rapid simmer and cook until syrupy (about the thickness of real maple syrup), 6 to 7 minutes. You should have about ¾ cup syrup.
  2. To make the French Toast
  3. Preheat the oven to 250°F. In a large bowl, whisk together the eggs, milk, cream, sugar, vanilla, and salt. In a large nonstick skillet, melt 1 tablespoon of the butter over medium heat. Submerge 4 slices of the bread in the egg mixture and let soak about 30 seconds, turning to make sure the slices are evenly soaked. Let the excess egg mixture drip back into the bowl.
  4. Cook the bread in the butter until golden on both sides, 2 to 3 minutes per side. Keep the first batch warm in the oven while you make the second batch with the remaining 1 tablespoon butter and the last 4 slices of bread. Serve the French toast warm with additional butter and drizzle with the warm Earl Grey syrup.
