Grilled spring onions with romesco sauce recipe

Ingredients

For the Spring Onions
  • 2 bunches large spring onions
  • 2 tbsp olive oil
  • 1 tsp coarse sea salt
For the Romesco Sauce
  • 50 g almonds
  • 15 g pine nuts
  • 25 g shelled walnuts
  • 3 sun-dried tomatoes
  • 2 small tomatoes
  • ½ red chilli
  • 2 cloves garlic
  • 4 tbsp vinegar
  • 5 tbsp olive oil
  • 2 tbsp tomato puree
  • 7 tbsp water
  • ½ tsp salt
How to Make It
  1. Process all the ingredients for the romesco sauce to a paste in a food processor using the pulse function.
  2. Mix the spring onions with the olive oil and salt.
  3. Grill the onions over direct heat for 15–18 minutes, turning them over often. Serve with the romesco sauce.
