Mixed berry coulis recipe

A fruity dressing with a sharp edge, often served with cakes, pudding and pastries to cut through the sweet flavour.


  • 250 g mixed frozen berries
  • 1 lemon juice
  • 85 g castor sugar
How to Make It
    To make the Coulis
  1. Heat the frozen berries, lemon juice and castor sugar in a heavy-based saucepan over medium heat and simmer until the sugar has dissolved.
  2. Pour the berry mixture into a food processor, blend until smooth and strain through a sieve. Set aside to cool.
