Paleo slow cooker pork recipe

This Paleo pork recipe is best when served warm over some rice. I also like to top this dish with some cilantro, some diced avocado or a crisp green salad.

Ingredients

  • 32 ounces trimmed pork shoulder, boneless
  • 1 white onion, sliced
  • ½ ounce coconut oil
  • ounces cocoa
  • 1 ounce ancho chili powder
  • chipotle chile peppers in adobo sauce
  • 1 teaspoon coriander
  • 1 teaspoon cinnamon
  • whole cloves
  • 32 ounces canned tomatoes
  • black peppercorns
  • ½ teaspoon salt
  • ounces sunflower seeds
  • ½ ounce raisins
  • anise seeds
How to Make It
  1. Heat oil in a frying pan on medium heat and sauté onion in the oil until browned around the edges.
  2. Sauté pork in the onions until browned evenly.
  3. Place the rest of the Ingredients in a food processor and blend until smooth.
  4. Transfer pork and onions to a slow cooker and pour sauce from the food processor over top. Cook on low for 8-10 hours until pork is tender enough to fall apart when pulled. Serve with your favourite toppings.
