CARAMEL APPLE SNACK CAKE

Ingredients

  • 2 cups old-fashioned oats
  • 1 cup sweetener that measures like sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon apple pie spice (or pumpkin pie spice)
  • 1 cup unsweetened applesauce
  • 4 large egg whites
  • 1 large egg
  • 1½ teaspoons caramel extract
  • ½ teaspoon almond extract (or vanilla extract)
  • 1¼ cups peeled and finely chopped apple (about 1 large apple)
  • ¼ cup chopped pecans or walnuts, optional
  • Light whipped topping,* optional
How to Make It
  1. Preheat the oven to 350 degrees. Spray a 9 × 9-inch square or 9-inch round baking dish with cooking spray. Blend the oats, sweetener, baking powder, baking soda, salt, cinnamon, and apple pie spice in a blender or food processor until the oats are finely ground. In a medium bowl add the unsweetened applesauce, egg whites, egg, caramel extract, and almond extract and stir to combine. Add the oat mixture to the applesauce mixture and mix well. Stir in the chopped apples and nuts if desired. Pour the batter into the prepared pan and bake 18 to 20 minutes or until a toothpick inserted in the center comes out clean. Cut into 9 slices and enjoy with whipped topping if desired!
