Coconut cherry cobbler recipe

Ingredients

  • 3 cups flour
  • 1½ cups sugar, divided
  • 1 tsp salt
  • 2 tsp baking powder
  • 1½ cups coconut milk
  • 2 eggs
  • 1 tbsp vanilla extract
  • ¼ cup olive oil
  • 4 tbsp butter
  • 1 cup sugar
  • 4 cups fresh pie cherries, pitted
How to Make It
  1. In medium bowl, add flour, ½ cup sugar, salt, and baking powder, whisking everything together to combine. Set aside.
  2. In another bowl, combine coconut milk, eggs, vanilla, and olive oil. Whisk together to combine.
  3. Add coconut milk mixture to flour mixture. Stir to combine. If necessary, use additional coconut milk to create a thick pancake-like batter. Set aside.
  4. Select Sauté mode on the Instant Pot.
  5. Add butter and melt while gently stirring. Once butter is melted, add 1 cup sugar. Mix together.
  6. Add freshly pitted pie cherries to the butter and sugar. Sauté for 2–3 minutes.
  7. Pour cobbler batter over cherries. Secure Instant Pot. Set mode to Cake. Press start.
  8. When finished, let pressure release naturally. Remove lid.
  9. Serve warm with your favorite ice cream.
