Bourbon BiscuitsA dark chocolate sandwich biscuit (cookie) perfect for dunking in a hot drink.

Ingredients

  • 200 g (7 oz/1⅔ cups) plain (all-purpose) flour
  • 100 g (3½ oz/½ cup) soft brown sugar
  • 75 g (2½ oz/1⅔ cups) cocoa powder
  • 1 teaspoon bicarbonate of soda (baking soda)
  • 0.5 teaspoon salt
  • 125 g (4 oz) frozen cubed butter
  • 2 tablespoons golden syrup (or dark corn syrup)
  • 4 tablespoons whole milk
  • For the buttercream filling:
  • 50 g (2 oz) skimmed milk powder
  • 100 g (3½ oz/generous ¾ cup) icing (confectioner's) sugar
  • 3 tablespoons cocoa powder
  • 75 g (2½ oz) unsalted butter, softened
  • 1 teaspoon golden syrup (or dark corn syrup)
  • 1 tablespoon whole milk
  • pinch of salt
