Ingredients

  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • ¾ teaspoon cumin seeds
  • Kosher salt and black pepper
  • 1 pita bread, toasted
  • 1 cup fresh or frozen corn kernels
  • 1 cup halved cherry tomatoes
  • 4 radishes, quartered
  • 2 small cucumbers, sliced
  • Torn fresh mint, for serving
How to Make It
  1. Combine 2 tablespoons of the oil, the lime juice, and cumin seeds; season with ½ teaspoon each salt and pepper.
  2. Brush the pita with the remaining tablespoon of oil. Tear into pieces and toss with the corn, tomatoes, radishes, cucumbers, and the dressing. Top with mint.
