Eastern Cauliflower Bhaji

Ingredients

  • 1 Head Cauliflower, riced
  • 6 Slices Bacon, finely diced
  • 12 Onion, diced
  • 2 cups Cheddar Cheese
  • 13 cup Parmesan Cheese
  • 3 Tbsp. Coconut Flour
  • 1 Tbsp. Curry Powder
  • 1 tsp. Garlic, Minced
  • 12 tsp. Cardamom
  • 12 tsp. Turmeric
  • 12 tsp. Coriander
  • 14 tsp. Cayenne Pepper
  • 2 tsp. Cumin
  • 1 tsp. Smoked Paprika
  • 1 Egg, beaten
  • 2 Tbsp. Coconut Oil
How to Make It
  1. 1. Rice the cauliflower in a food processor.  
  2. 2. Get as much excess moisture out of the cauliflower as possible, using either paper towels or cheese cloth.  
  3. 3. Add all the spices to the cauliflower and mix well.  
  4. 4. Dice 6 slices of bacon very small. Cook until it's crisp and remove from the pan.  
  5. 5. In the same pan, fry the diced onion in the bacon fat.
  6. 6. Add the bacon, onion, coconut flour, and cheeses to the cauliflower and mix well.  
  7. 7. Add 1 scrambled egg to the mixture as a binder and mix everything well again.  
  8. 8. Heat 2 Tbsp. coconut oil in a pan on medium-high heat.  
  9. 9. Take a small handful of the cauliflower mixture, form into patties and fry for 2-3 minutes on each side.  
  10. 10. Drain on paper towels, then serve.
