Minty Melon Salad Recipe

  • 1 cup water
  • ¾ cup sugar
  • 3 tbsp lime juice
  • 2 tsp fresh mint, chopped
  • 5 cup watermelon, cubed
  • 3 cup cantaloupe, cubed
  • 3 cup honeydew, cubed
  • 2 cup nectarines, pitted and sliced
  • 1 cup blueberries
  • Garnish: fresh mint sprigs
How to Make It
  1. Combine water, sugar, juice and mint in a saucepan; bring to a boil. Boil for 2 minutes, stirring constantly. Remove from heat; cover and cool completely.
  2. Meanwhile, combine fruit in a 13"x 9" glass baking pan. Pour cooled dressing over fruit; stir until well coated. Cover and chill for at least 2 hours, stirring occasionally. Drain liquid before serving. Garnish with fresh mint sprigs.
