PEANUT BUTTER BANANA BREAD

Ingredients

  • 1½ cups old-fashioned oats
  • ½ cup protein powder (or additional ½ cup oats)
  • 1 ripe banana, mashed (about ½ cup mashed)
  • ½ cup unsweetened applesauce
  • ½ cup plain nonfat Greek yogurt (or ¼ cup additional applesauce)
  • 4 large egg whites (½ cup)
  • ¼ cup creamy peanut butter (or ½ cup peanut flour
  • mixed with ¼ cup water)
  • 1 cup sweetener that measures like sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
How to Make It
  1. Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray. In a blender place the oats, protein powder, banana,
  2. applesauce, yogurt, egg whites, peanut butter, sweetener, baking soda, baking powder, and salt and blend until the batter is smooth. Pour the batter into the prepared loaf pan and bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean. Let cool and enjoy!
