Polenta and tomato stack recipe

Ingredients

  • 1 package premade polenta
  • 2 tablespoons olive oil
  • 1 cup minced onion
  • 1 tablespoon sliced garlic
  • 4 leaves basil
  • 6 cups spinach
  • ½ cup sun dried tomato
  • ¾ cup veg stock
How to Make It
  1. Saute onion and garlic in 1 tablespoon olive oil
  2. Divide ½ of the mixture and place in a blender with sun dried tomatoes, veg stock and basil. Puree to make sauce.
  3. Saute spinach with remainder of garlic and onions with 1 tablespoon olive oil, season with salt and pepper.
  4. Slice polenta and layer spinach in between. Drizzle with sauce.
