Ingredients

  • 8 each medium pears, cored
  • 1 cup radicchio leaves, cut into 1-inch pieces
  • 2 tbsp pine nuts
  • ¼ tsp finely grated lemon zest
  • ¼ cup freshly squeezed lemon juice
  • 1 cup ice 2 cups or filtered water
  • 1-inch radicchio leaf pieces for garnish
How to Make It
  1. Place all of the ingredients, except the garnish in a high powered blender.
  2. Start on low, and then increase the speed to high. Blend until smooth.
  3. For Garnish
  4. Top each glass off with a radicchio leaf, and then serve.
