Raisin and brown rice salad recipe

Ingredients

Dressing
  • 2 tablespoons walnut oil
  • 1 tablespoon raw, unfiltered apple cider vinegar
  • Sea salt to taste
  • ⅛ teaspoon cayenne
Salad
  • 1 cup brown rice, cooked
  • 1 stalk celery, chopped
  • ½ cup raisins
  • ½ cup sultanas
  • 1 cup pineapple, cut into bite-sized pieces
  • 2 tablespoons pineapple juice
  • ½ teaspoon cinnamon
  • ½ teaspoon cloves
  • 1 tablespoon fresh parsley, chopped, for garnish
How to Make It
  1. Whisk oil, vinegar, salt, and cayenne together in a small bowl.
  2. Place the brown rice, celery, raisins, sultanas, pineapple, juice, cinnamon, and cloves in a salad bowl and toss with the dressing. Garnish with parsley.
