Raw vegetable nori wrap recipe

Ingredients

  • 2 stalks celery, sliced
  • 1 small red onion, sliced
  • 4 scallions
  • 1 carrot, sliced
  • 1 red pepper
  • 1 seedless cucumber
  • ½ cup shredded cabbage
  • 2 oz lemon juice
  • 2 tablespoons Parsley
  • 1 tablespoon Dill
  • Salt and pepper to taste
  • 1 tablespoon ginger, grated
  • ½ cup goji berries soak to soften
  • 1 avocado
  • 8 nori wraps
How to Make It
  1. Combine all ingredients except ginger, goji berries, avocado & nori in a bowl and toss with lemon juice and herbs.
  2. Combine ginger and goji berries in blender. Blend until smooth.
  3. Mash avocado with some lemon juice. Place raw vegetables in nori wrap and roll.
