Ingredients

Dressing
  • ¼ cup fresh lime juice
  • 1 teaspoon rice vinegar
  • 1 clove garlic, pressed
  • Sea salt to taste
  • ½ teaspoon freshly ground black pepper
Salad
  • ½ cup peas
  • ½ cup mushrooms, sliced
  • ½ summer squash, diced
  • 1 carrot, chopped
  • 1 cup couscous, cooked
  • 1 red onion, diced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons fresh basil, chopped
  • 3 tablespoons fresh cilantro, chopped
  • ¼ cup pine nuts
  • Sea salt to taste
  • ½ teaspoon freshly ground black pepper
  • ½ cup spinach leaves, for garnish
How to Make It
  1. Whisk lime juice, vinegar, garlic, salt, and pepper together in a small bowl.
  2. Place peas, mushrooms, squash, and carrots in a steamer and cook for 10 minutes until tender.
  3. Place steamed vegetables, couscous, onion, parsley, thyme, basil, cilantro, pine nuts, salt, and pepper in a salad bowl and toss with the dressing.
  4. Serve on a bed of spinach leaves.
