Tomatoes with sprouted hummus recipe

Tomatoes stuffed with fresh made Middle East sprouted hummus sauce.


  • 2 medium tomatoes
  • 2 tbsp tahini
  • ½ cup coconut flesh
  • 1 cup sprouted chickpeas
  • 2 tbsp fresh coriander
  • ¼ cup soaked pumpkin seeds
  • 1 lemon juice
  • 1 garlic clove
  • Pinch of ground white pepper
  • Pinch of mustard powder
  • Pinch of cayenne
  • 2 tbsp olive oil
  • Salt
  • Water as needed
How to Make It
  1. Remove the inside part of the tomatoes using a spoon and keep it aside.
  2. Put the rest of the ingredients and the tomato inside in a blender and blend well until it becomes a smooth mixture.
  3. Use it to fill the tomatoes. Garnish with a finely chopped fresh onion.
