Ingredients

For the Dough
  • 6 eggs
  • 1 medium banana
  • 8 oz 1 cup Oats
  • 2 oz Whole grain flour
  • 6 tbsp Liquid honey
  • 2 tbsp Cacao powder
  • 1 tbsp Olive/coconut oil
  • 1 tsp Baking powder
For the Topping
  • 1 medium banana
How to Make It
  1. Preheat the oven to 380°F; put the baking tray inside.
  2. Prepare the dough.
  3. Clean one banana from the peel; add the rest of the ingredients for the dough in a blender cup and mix well.
  4. You can also make the dough manually just whisk eggs and honey; then add mashed banana and the rest of ingredients. Mix well using a tablespoon.
  5. Take the second banana; clean it from the peel, and slice into thin pieces. (We will use banana slices for the topping.)
  6. Prepare the tray apply oil or place muffin cups inside.
  7. Pour out the dough. (It is enough dough for 12 muffins). Fill each tray section to about three-fourths, as the dough will rise during baking.
  8. Place banana slices on the top (2–3 pieces per each muffin).
  9. Place the tray in the oven for 30 minutes.
  10. To check if the dough is ready, just prick it with the fork—the pieces of the dough should not stick to the fork when you remove it. Extend the time by 5–10 minutes, if necessary.
