This cake has a very rich chocolate taste and a soft structure. It is the fruit version of a cheesecake.
Recipe is for 8 portions (9″ cake).

Ingredients

  • 6 eggs
  • 2 bananas
  • 30 g Dark chocolate, 6 pieces
  • 8 oz Whole grain flour
  • 2 tbsp Liquid honey
  • 2 tbsp Brown sugar
  • 1 tbsp Olive/coconut oil
  • 2 tbsp Cacao powder
  • 1 tsp Baking powder
For the Topping
  • 2 tbsp Cacao powder
How to Make It
  1. Preheat the oven to 380°F.
  2. Prepare the dough. You can make it two ways: using a blender or manually.
  3. Way 1. Peel the bananas, cut them, and place in a blender cup. Add the rest of ingredients for the dough in a blender and mix well.
  4. Way 2. Whisk eggs, honey, and sugar in a bowl. Add mashed bananas, grated chocolate, and the rest of ingredients. Mix well using a tablespoon.
  5. Prepare the tray—apply oil on the tray surface or place a layer of wax paper at the bottom.
  6. Pour out the dough; spread it using a tablespoon.
  7. Place the tray in the oven for 40 minutes.
  8. To check if the dough is ready, just poke it with a fork—the pieces of the dough should not stick to the fork when you remove it. Extend the time by 5–10 minutes, if necessary.
  9. Remove the cake and cool it down before serving. Just sprinkle cacao powder on the top before serving.
