Yummy tuna, greens, and potato salad recipe

Ingredients

  • 3 large red skin potatoes
  • 1 cup sweet peas
  • 1 tablespoon capers
  • ½ cup parmesan cheese
  • 2 large cans drained white tuna
  • Salt
  • Black pepper
  • 1 teaspoon lime juice
  • ¼ cup sour cream
  • ¼ cup mayonnaise
  • ½ Tablespoons chili powder
How to Make It
  1. I leave the skin on my potatoes when I make this salad, but the choice is certainly yours. Boil the water with salt. Cook the potatoes until done but don’t overcook them. Nothing worse than a mushy potato salad.
  2. Let the potatoes cool.
  3. In a large mixing bowl, combine the mayonnaise, sour cream, lime juice, spices, and seasonings.
  4. Add the cooled down potatoes, peas, drained tuna, peas, and capers. Mix well.
  5. Finally, add the parmesan cheese and combine again.
