Ingredients

  • 5 medium carrots, cut into 2.5 cm pieces
  • 3 medium beetroots, peeled and cut into 2.5 cm pieces
  • 3 medium parsnips, peeled and cut into 2.5 cm pieces
  • 1 small swede, peeled and cut into 2.5 cm pieces
  • 3 tablespoons solid cooking fat, melted
  • ½ teaspoon sea salt
How to Make It
  1. Preheat the oven to 200°C.
  2. Combine the carrots, beetroots, parsnips and swede in a bowl and coat with the cooking fat and salt.
  3. Transfer to a baking dish and bake until soft and browned on the outside (about 1 hour). Make sure to stir a couple of times while cooking. Serve warm.
